Some of the recipes you see on these pages are taken from some of the best recipe books which focus on Spanish food such as the Moro recipe books and the food of Spain and Portugal cook recipe book.

Paella - To most people this is thought of as the national dish of Spain and I suppose they are not too far wrong. It remains a very popular dish and can be found all over Spain in fne restaurants and in cafe and snack bars along the beaches. There are many variations of this recipe and we will try and add as many as possible so please keep checking back for more recipes.

Prawns, Gambas, Langostinos, whatever you want to refer to them as they are a highly popular food throughout Spain with many recipes designed to capture the succulent flavour and texture of this most popular shellfish. Some Spanish recipes opt for heat and add chilli or pimenton caliente whereas others go for the natural flavours. You will find prawns on the starters menus as well as the main course and there are many dishes on the tapas menus too. One of the most famous starter or tapas dishes are gambas pil pil or prawns pil pil. This is a truly mouthwatering dish which arrives at your table sizzling.
